Authentic Malabar Paratha Recipe
Malabar Paratha is popular South Indian layered flat bread. This paratha is prepared with plain flour dough and rolled in a special way. These parathas are tasty, flaky, and slightly crispy. Let’s follow this authentic Paratha recipe.
Ingredients
- 2-1/2 cupsRefined Flour
- 1 tablespoonGhee
- 1Egg
- 1/2 cupMilk
- 1 tablespoonSugar
- 1 tablespoonOil
Directions
- Ina bowl add flour, ghee, egg, milk, sugar, salt, sufficient lukewarm water and knead into a hard dough.
- Cover the dough with a damp muslin cloth and keep it aside to rest for 15 minutes.
- Divide into equal portions and roll into balls and brush a plate with oil and place the balls on them and cover again with damp muslin cloth for some time.
- Add turmeric powder, cumin seeds powder, garam masala, and salt, mix it well and cook for 2 minutes and remove it from the flame and cool completely.
- Spread a little oil on the table top, place each ball on it and spread with your fingers to a paratha and apply little ghee over it.
- Make small pleats and roll into a round ball.
- Heat a nonstick tawa and spread the balls into parathas with your fingers, and place on the tawa.
- Drizzle a little oil on the paratha and cook until light brown and crisp from both sides.
- Serve hot with stew.
