Tasty Dates and Walnut Cake Recipe
Dates and Walnut Cake presents the right blend of good taste and good health. The dates and walnuts added to the cake imparts a sweet nutty texture and also increases the health quotient. Let’s follow this recipe.
Ingredients
- 1 cupSliced dates (khajur)
- 3/4 cupChopped walnuts (akhrot)
- 1 tbspInstant coffee powder
- 1/2 cupSoft butter
- 1/2 cupCondensed milk
- 1 1/4 cupsPlain flour (maida)
- 1/2 tspBaking powder
- 1 tspBaking soda
- 1 tspVanilla essence
Directions
- In a bowl add instant coffee powder and 1 tbsp of hot water and mix it well and keep it aside.
- In a bowl soak sliced dates and 1 cup of hot water and cover it with a lid and keep it aside for 30 minutes and after 30 min drain the water from the dates and keep it aside.
- In another bowl add butter and condensed milk and whisk it using an electric beater till smooth.
- Add plain flour, baking powder, and baking soda to the butter mixture and mix it well using a spatula.
- Add soaked dates, 1/2 cup walnuts, vanilla essence and coffee-water mixture and mix it well by using a spatula.
- Grease a bread loaf tin with butter and pour the batter into a greased bread loaf tin of 200 mm. (8”) and tap it lightly.
- Sprinkle the 1/4 cup of walnuts evenly over it and bake it in a pre-heated oven at 180c (360f) for 55 minutes.
- Cut the cake into 13 mm. ( 1/2“) slices and serve or store in an air-tight container.
