Crispy Fried Mixed Vegetable Recipe
The Fried Mixed Vegetable is a quick and easy vegetable to make that has the goodness of vegetables, a nice color, taste, and nutrition. Serve this Crispy Fried Mixed Vegetable along with hot roti to enjoy a wholesome meal.
Ingredients
- 3 cupsmixed vegetable strips (capsicum, cauliflower and baby corn)
- oilfor deep-frying
- 1 tbspoil for cooking
- 1 tbspfinely chopped garlic (lehsun)
- 1/2 cupchopped spring onions (whites and greens)
- saltto taste
- 3 tbspschezwan sauce ( easily available in the market)
To Be Mixed Together Into A Thick Batter (using Approx. 1/2 Cup Of Water)
- 1/2 cupcornflour
- 1/2 cupplain flour (maida)
- 1 tspginger-garlic (adrak-lehsun) paste
- 1/2 tspfreshly ground black pepper (kalimirch)
- 1 tsplemon juice
- saltto taste
Directions
- In a bowl add cornflour, flour, ginger-garlic paste, pepper, lemon juice, and salt and mix it well.
- Heat oil in a deep non-stick pan and dip each vegetable strip into the batter and deep-fry in the hot oil and fry few veggies at a time and fry till they turn golden brown in color from all the sides.
- Drain on an absorbent paper and keep these deep-fried vegetables aside.
- Heat oil in a non-stick kadhai or a broad non-stick pan on a high flame till it smokes.
- Add garlic and saute on a high flame for few second and add spring onions and salt and saute on a high flame for 1 minute.
- Add schezwan sauce and cook on a high flame for 30 seconds and stir continuously.
- Add the fried vegetables in it and toss gently.
- Serve it.
