Mixed Vegetable Sambar Recipe
Mixed Vegetable Sambar is a famous South Indian dish. It is very easy to prepare and even more healthy because of mixed vegetables. It goes very well with hot rice. You can even serve this with idli or dosa. Let’s follow this recipe.
Ingredients
For pressure cooking
- 1/2 cuptoor dal/ arhar dal/ split pigeon pea
- 2 cupswater
- 1/4 tspturmeric powder/ haldi
- 1 cupradish/ mooli/ mulangi, chopped
- 5-6 piecesdrumstick
- 1/2 cupcarrot, chopped
Other ingredients
- 1 cuptamarind juice
- 1green chili slit lengthwise
- 3/4 tomatofinely chopped
- Fewcurry leaves
- 1/2 tspturmeric powder/ haldi
- 3/4 tspjaggery grated
- 1/2 cuponion, cubed
- To tasteSalt
- 1 tbspsambar powder(easily available at the market)
For tempering
- 2 tbspcoconut oil/ cooking oil
- 3/4 tspmustard seeds/ rai
- Pinch ofhing/ asafoetida
- 2 driedred chili
- Fewcurry leaves
Directions
Pressure cooking dal and vegetables recipe
- In a pressure cooker add half cup washed toor dal, 2 cups of water or water as required to cook dal and also add turmeric powder and then place a small bowl into a pressure cooker and add veggies (radish, carrot, drumstick) or vegetables of your choice into the bowl and do not add any water.
- Cover the cooker and pressure cook for 35 min on medium flame and once the pressure releases, remove the cooked vegetable bowl and mash the dal well.
Mix veg sambar recipe
- In a large kadhai squeeze 1 cup of tamarind juice and add chili, tomatoes, curry leaves, turmeric powder, and jaggery.
- Boil the tamarind water and add onions and salt and mix it well and cook for 5 minutes.
- Add cooked vegetables and boil it again and do not over cook as vegetables are already cooked.
- Add mashed dal and give a good mix and do not over boil after adding dal as it results to indigestion.
- Add style sambar powder and give a quick mix or else the sambar powder will form lumps.
- Cook for a minute and switch off the flame.
For the tempering
- In a kadhai heat oil and add mustard seeds, hing, red chili and curry leaves and once they splutter, pour immediately into the sambar.
- Give a good mix to vegetable sambar and serve with hot steamed rice.
Notes:
You can use any vegetables of your choice like brinjal, potato or beans.
Instead of pressure cooking vegetables, cook veggies in tamarind juice for more flavor.
Additionally, mash the dal well before adding to sambar or else they will not be of smooth consistency.
Finally, mix vegetable sambar taste great when tamarind is boiled for the minimum of 5 minutes.
