Healthy Corn Spinach Tomato Soup Recipe
Corn, Spinach Tomato Soup is a perfect recipe on a cold day and your kids will love it. It is a healthy and delicious soup prepared by using corn, spinach, and tomato. It is generally served as an appetizer before the meal.
Ingredients
- 1 cupgrated sweet corn
- 1/2 cupfinely chopped tomatoes
- 1/4 cupshredded spinach (palak)
- 1 tbspyellow moong dal (split yellow gram)
- 1 tbspbutter
- 2 tbspfinely chopped onions
- To tasteSalt
- 1 tbspcornflour dissolved in 2 tbsp cold water
- 1/2 tsplemon juice
- To tastefreshly ground black pepper
Directions
- Step1Ina pressure cooker add sweet corn, yellow moong dal and 2½ cups of water and pressure cook for 15 min and allow the steam to escape before opening the lid and keep it aside.
- Step2Heat butter in a deep non-stick pan, add onions and saute on a medium flame for 1 to 2 minutes.
- Step3Add prepared corn-moong dal mixture, ¼ cup of water, tomatoes, spinach and salt mix it well and cook on a medium flame for 2 minutes and stir occasionally.
- Step4Add cornflour-water mixture, mix it well and cook on a medium flame for 1 to 2 minutes and stir continuously.
- Step5Add lemon juice and pepper powder and mix it well.
- Step6Serve it hot.
