Knead into a firm dough by using water as required and cover with a wet muslin cloth and keep aside for 10 to 15 minutes. Divide the dough into equal portions and roll each portion into a 100 mm. (4") diameter circle. Cook each portion lightly over a tawa (griddle) for a few seconds on each side and keep it aside. Heat oil in a kadhai on a medium flame and deep-fry the bhaturas or fry till they puff up and are golden brown on both the sides and drain on absorbent paper. Ingredients

  • 1/2 cupWhole wheat flour (gehun ka atta)
  • 1/2 cupPlain flour (maida)
  • 1/2 cupBoiled, peeled and mashed potatoes
  • 1 tbspChopped coriander (dhania)
  • 2 tbspFinely chopped onions
  • 2 tspFinely chopped green chilies
  • 1/4 tspGaram masala
  • to tasteSalt
  • for deep-fryingOil

Directions

  • In a bowl add whole wheat flour, plain flour, mashed potatoes, chopped coriander, chopped onions, green chili, garam masala, and salt.
  • Knead into a firm dough by using water as required and cover with a wet muslin cloth and keep aside for 10 to 15 minutes.
