Easy And Delicious Peppermint Cupcake Recipe

Ingredients
For The Chocolate Sponge
- 1/2 cupplain flour (maida)
- 2 tbspcocoa powder
- 1/2 tspbaking powder
- 1/4 tspsoda bicarbonate
- 1/2 cupcondensed milk
- 3 tbspmelted butter
- 1/2 tspvanilla essence
For The Frosting
- 6 tbspbutter ( at room temperature)
- 12 tbspicing sugar
- 6 tspcocoa powder
- 1 tspvanilla essence
- 1 tsppeppermint essence
Directions
For the chocolate sponge Cupcake
- Sieve the plain flour, cocoa powder, baking powder and soda bicarbonate in a bowl and keep it aside.
- In a bowl add condensed milk, butter, vanilla essence, and 1½ tbsp of water and whisk it well.
- Add prepared flour mixture and mix it gently with help of a spatula to make a batter of dropping consistency.
- Pour an equal quantity of the batter into greased and dusted 68 mm. (2½”) diameter cupcake mold molds.
- Bake in a pre-heated oven at 200ºc (400ºf) for 5 minutes and then at 180ºc (360ºf) for 15 to 20 minutes or bake till done.
- The sponge is done when it leaves the sides of the mold and allow it to cool completely and Keep it aside.
For the frosting
- In a bowl add butter and beat it with help of a spatula.
- Add icing sugar, cocoa powder, vanilla essence, and peppermint essence, and mix it well and keep it aside.
How to proceed
- Fill the frosting in a piping bag and pipe out the frosting on the each cupcake.
- Serve it.
