Easy Gobi Biryani Recipe
Cauliflower is loaded with nutrients. It is a very good source of vitamin C and manganese. It strengthens the immune system and protects against diseases. So let us try to include cauliflower in our diet. Here is a simple and easy Gobi(Cauliflower) Biryani recipe. Let’s follow this recipe.
Ingredients
- 1 cupBasmati rice
- 1-1/2 cupsWater
- 1 tablespoonGhee
- 1Onion, finely sliced
- 1/4 teaspoonCumin seeds
- 1/4 teaspoonFennel seeds (Saunf)
- 2Cardamom pods, coarsely crushed
- 2cloves
- 1 inchCinnamon Stick
- a pinchof Salt
Ingredients for marination
- 2 tbspRed chili powder
- 2 tbspTurmeric powder (Haldi)
- a pinchSalt
Ingredients for cauliflower masala
- 1Cauliflower (gobi), separated into florets
- 3Onions, finely sliced
- 2Tomatoes, finely sliced
- 1/2 teaspoonsGinger, chopped
- 1/2 teaspoonGarlic, chopped
- 4Green Chilies, coarsely crushed
- 1/2 teaspoonGaram masala powder
- 1/2 teaspoonCumin powder
- 1/2 cupMint Leaves (Pudina), finely chopped
- 1/2 cupCoriander leaves (Dhania), finely chopped
- Saltto taste
Ingredients for garnish
- 10Cashew nuts
- 10Raisins
- 1Onion, finely sliced
Directions
- Heat ghee/oil in a wok/kadhai and roast the cashew nuts and raisins until the cashews are lightly brown in color and keep it aside.
- Saute the sliced onions until the onions are lightly caramelized and keep this aside.
- Soak rice in water for half an hour and drain it and keep it aside.
- In a pan saute cumin seeds, fennel seeds, cardamom, cloves and cinnamon for a few seconds.
- Add finely sliced onions and saute till it turns soft and transparent.
- Add rice and saute till glossy and add 2 cups of water and a pinch of salt into it and cover with lid.
- Cook on a low flame or until all the water is absorbed and at this stage turn the heat off. heat.
- Keep the lid closed for half an hour and separate the rice with a fork without pressing it much.
The next step is to prepare Gobi Biryani with Cauliflower Masala
- Marinate the cauliflower with the ingredients listed under "For Marination" and keep it aside for 10 minutes and shallow fry the marinated cauliflower slices in till crisp.
- Heat oil/ghee in a wok/kadhai and add finely sliced onion to it and saute till it becomes golden brown.
- Add crushed green chilies and chopped ginger and garlic and saute for a few minutes till raw smell goes away.
- Add garam masala and cumin (jeera) powder and saute for a few seconds.
- Add sliced tomatoes along with salt and saute until tomato turn soft.
- Once the oil separates, add the crispy fried cauliflower slices and mix it well.
- Add coriander and mint leaves and toss well.
- Finally, add the cooked basmati rice on top and cover the pan and cook on a low flame for 4 min.
- Garnish the Gobi Biryani with fried onions, cashew, and raisins.
- Serve Gobi Biryani along with raita for a simple and delicious lunch or dinner.
