Ingredients

  • 3 cupsvegetable stock
  • 1 cupthickly sliced mushrooms (khumbh)
  • 1 cupre-hydrated and sliced oyster mushrooms (optional)
  • 1 cupcubed tofu (bean curd/soya paneer)
  • 1/4 cupfinely chopped green chilies
  • 25 mm (1")peeled and crushed fresh ginger (adrak)
  • 1stalk lemongrass crushed
  • 5lemon leaves (optional) , torn
  • 1 tspsoya sauce
  • 2tomatoes, deseeded and chopped
  • 2 tspfinely chopped spring onions
  • 1 tbspchopped coriander (dhania)
  • saltto taste
  • 1/2 tsplemon juice
  • a fewcoriander (dhania) sprigs

Directions

  • In a pan pour vegetable stock, add button and oyster mushrooms, tofu, green chilies, ginger, lemongrass and lime leaves and mix it well.
