Clear Vegetable Soup with Tofu Recipe
Clear Vegetable Soup with Tofu is an interesting soup recipe and a rich source of nutrients. This soup is an appetizer made with tofu, vegetable stock and seasoned with salt. It is easy to make and healthy at the same time.
Ingredients
- 3 cupsvegetable stock
- 1 cupthickly sliced mushrooms (khumbh)
- 1 cupre-hydrated and sliced oyster mushrooms (optional)
- 1 cupcubed tofu (bean curd/soya paneer)
- 1/4 cupfinely chopped green chilies
- 25 mm (1")peeled and crushed fresh ginger (adrak)
- 1stalk lemongrass crushed
- 5lemon leaves (optional) , torn
- 1 tspsoya sauce
- 2tomatoes, deseeded and chopped
- 2 tspfinely chopped spring onions
- 1 tbspchopped coriander (dhania)
- saltto taste
- 1/2 tsplemon juice
- a fewcoriander (dhania) sprigs
Directions
- In a pan pour vegetable stock, add button and oyster mushrooms, tofu, green chilies, ginger, lemongrass and lime leaves and mix it well.
- Cook it for 5 minutes or till they release flavors.
- Add soya sauce, tomatoes, spring onions, cilantro and salt, mix it well and cook for a minute in a low flame.
- Remove from the flame and add the lemon juice and mix it well.
- Garnish with coriander sprigs and serve hot.
