Refreshing Bottle Gourd (Lauki) Raita Recipe
Bottle Gourd Raita is an interesting and refreshing curd preparation that is widely enjoyed during summer months. It is a really easy recipe made with bottle gourd immersed in the mildly spiced curd. This recipe can be enjoyed chill during hot summers as an accompaniment with roti or rice.
Ingredients
- 2 cupsYogurt (Curd)
- 1 cupBottle gourd (lauki), peeled and grated
- 1Cucumber, peeled and grated
- 1Green Chili, finely chopped
- 1Coriander leaves (Dhania), small bunch, finely chopped
- 1/2 teaspoonCumin powder
- Saltto taste
Directions
- Grate bottle gourd, cucumber, and chop green chili and keep it aside.
- In a bowl, add the grated lauki, cucumber, yogurt, green chilies, salt, cumin, and coriander.
- Mix it well and adjust salt and spices level according to your taste.
- Pour it into a serving bowl and serve it chill along with roti.
Bottle gourd is a rich source of thiamin, niacin (vitamin B-3), pantothenic acid (vitamin B-5), pyridoxine (vitamin B-6), calcium, iron, zinc, potassium, manganese and magnesium.
The curd is a good source of calcium, potassium, phosphorous, zinc, and vitamin.
