Sev Puri Chaat Recipe
Sev Puri is one of the popular Indian Chaat. This combination of sev, boiled potatoes, onion, and assortment of chutneys like green chutney and tangy tamarind chutney makes it simply irresistible. Learn how to make it at home by following this easy chaat recipe
Ingredients
- 24papdis(puris)
- 1/2 cupboiled potato cubes
- 1/2 cupfinely chopped onions
- chaatmasala for sprinkling
- 24 tspkhajur imli ki chutney
- 12 tspgreen chutney
- 12 tspfresh garlic chutney
- 2 tsplemon juice
- 3/4 cupnylon sev
For khajur imli ki chutney
- 1 cupdeseeded dates (khajur)
- 2 tbspdeseeded tamarind (imli)
- 1/2 cupgrated jaggery (gur)
- 1/2 tspchili powder
- 1 tspcumin seeds (jeera) powder
- saltto taste
For fresh garlic chutney
- 3/4 cuproughly chopped garlic (lehsun)
- 1 tbspchili powder
- 1 tsptamarind (imli) pulp
- 2 tspcoriander (dhania) powder
- 1/2 tbsplemon juice
- saltto taste
For Green Chutney
- 1 1/2 cupsroughly chopped coriander (dhania)
- 4green chilies , roughly chopped
- 1 1/2 tsplemon juice
- 1 tbspsugar
- 4 tbspfreshly grated coconut
- saltto taste
For The Garnish
- 4 tbspfinely chopped coriander (dhania)
- 2 tbspchopped raw mangoes
Directions
For khajur imli ki chutney
- Wash the dates and tamarind and put them in a pressure cooker.
- Add the jaggery and 1 cup of water and pressure cook for 15 min.
- Allow the steam to escape and then blend in a mixer to a smooth paste.
- Strain the mixture through a sieve and keep it aside.
- Add 1½ cups of water, chili powder, cumin seeds powder and salt and mix well.
For fresh garlic chutney
- Combine all the ingredients along with ¼ cup of water in a mixer, mix well and blend to a smooth paste and keep it aside.
Green Chutney
- Combine all the ingredients in a mixer and blend into a smooth mixture by using a little water and keep it aside.
How to proceed
- Just before serving, arrange 6 papdis on a serving plate.
- Top each papdis with a few potato cubes, little onions and sprinkle a little chaat masala over it.
- Top it with 1 tsp of khajur imli ki chutney, ½ tsp of green chutney and ½ tsp of garlic chutney.
- Put a ½ tsp lemon juice and 1½ tsp of sev over each papdis.
- Garnish with 1 tbsp of coriander and ½ tbsp of raw mangoes evenly over it.
- Serve immediately or else the papdis become soggy.
