Potato Basket Pizza Recipe

This Pretty Potato Baskets Pizza is filled with vegetables and paneer that makes interesting finger food. It is baked with cheese on top and they look irresistible and taste yummy when served hot. It is a filling snack that comes packed with carbohydrates and proteins. Try this recipe.
Ingredients
For Basket
- 1 LargeRusset Potato
- 1/4 teaspoonSalt (or as required)
- 1/4 tspPepper
- 1 TbspOil
For Filling
- 2 TbspMushroom – finely chopped
- 2 TbspTomatoes – finely chopped
- 2 TbspGreen pepper – finely chopped
- 2 TbspBaby spinach – finely chopped
- 2 TbspPaneer grated
- 2-1/2 TbspTomato Ketchup
- 5 TbspGrated Mozzarella cheese
Directions
- Mix all the vegetables and paneer in a bowl and keep it aside.
- Preheat over to 350 degrees F.
- Peel the potato and grate it and squeeze out the excess water from the grated potato.
- In a bowl add grated potato, salt, pepper, and oil and mix it well.
- Grease a muffin pan with non-stick spray or oil.
- Place 1 teaspoon of grated potato mixture in each muffin hole and spread it out evenly towards the edges so that it looks like a basket.
- Bake this in the oven for 30 minutes at 350 degrees F.
- After baking, add 1/2 teaspoon of tomato ketchup to each basket and spread it well.
- Add 2 teaspoons of vegetables-paneer mixture to each basket and on the top add 1 teaspoon of grated mozzarella cheese to each basket and bake this again for 5 minutes.
- Serve it hot.
