Creamy Mushroom Soup Recipe
Quickly prepared healthy, delicious Creamy Mushroom Soup to be served for lunch or dinner. A perfect soup recipe for any occasions and for people of all age group. Follow this healthy recipe.
Ingredients
- 3 tbspoil for sauteing
- 2 cupschopped onions (2 medium ones)
- 3 to 4cloves of garlic (lehsun), crushed
- 1/4 cupbarley
- 1/4 tspnutmeg (jaiphal) powder
- 1 1/2 lbmushrooms (khumbh) , wiped clean with a damp towel, stems trimmed
- 8 cupsVegetable Broth
- 1/2 cupchopped parsley
- salt & pepperto taste
Directions
- Saute the onions and garlic in a large heavy pot in oil.
- Add barley and nutmeg and cook for 1 minute and stir it.
- Add chopped mushrooms, broth and sherry.
- Boil it in a low flame and cook for 40 minutes.
- Add parsley and cool soup slightly.
- Puree soup in a food processor or blender until very smooth.
- Return to the pot and season with salt and pepper.
- Reheat and garnish with sliced mushrooms.
- Serve hot.
