Anjeer Khajoor Roll/ Dry Figs Dates Roll Recipe

Ingredients
- 20 piecesDry Figs/ Anjeer
- 1-1/2 CupsDates/Khajoor
- 1/3 CupWalnut
- 1/3 CupAlmond
- 1/3 CupCashew nuts
- 1/2 tspNutmeg Powder
- 3/4 CupDesiccate Coconut
- As requiredSilver Warq
- 1 CupWater
Directions
- Soak dry figs/anjeer in warm water for 1 hour and de-seed the dates and chop into pieces.
- Chop the almond, walnut, cashew and if you want you can blend it also and keep it aside.
- Grind soaked figs without any water and also blend the dates to a smooth paste.
- In a bowl add half of the chopped dry fruit mixture, figs and dates paste and knead a soft pitiable dough.
- Add coconut (coconut helps to make the dough firm and non-sticky) and divide the dough into equal pieces and make smooth balls.
- Take a ball and keep between plastic sheets or zip lock bags and roll to make a thin layer and cut the edges if required.
- Sprinkle almond, cashew, and walnut around 1 tbsp of each and start to fold the layer into a roll, use plastic sheet for folding, this way the dough won’t stick or break.
- Keep the roll wrap in the plastic sheet and fold the edges of the sheets.
- Store wrapped roll in the fridge for 2-4 hours or overnight, apply silver warq if you are using and cut in the desired shape.
- Serve it relish the taste.
