Tasty Tomato and Coconut Rice Recipe
Tomato and Coconut Rice is a brunch, dinner, lunch, and main course dish. The main ingredients for this dish are tomato and coconut. This easy dish is a kid friendly dish. This rice dish can be served with pickles or can be had as it is. Let’s follow this tasty recipe.
Ingredients
- 1 1/2 cupsraw rice
- 10-12curry leaves
- 1clove
- 1cardamom
- 1cinnamon stick
- 1star anise
- 1large onion, finely sliced
- 3ripe tomatoes, finely chopped
- 1/2 tbspfinely chopped coriander leaves
- saltto taste
- 1 tbspoil + 1/2 tbsp ghee

Make a paste:
- 1/2 tbspcoriander seeds, dry roast
- 1/2 tspcumin seeds, dry roast
- 1 tspsaunf, dry roast
- 4-5 tbspgrated fresh coconut
- 1ginger
- 5garlic flakes
- 3cloves
- 1cinnamon stick
- 1cardamom
- 1 tbspchopped coriander leaves
- 6-7mint/pudina leaves
- 1-2green chili (adjust)
- 2shallots or a small onion
Directions
- Blend coriander seeds, cumin seeds, saunf, grated fresh coconut, ginger, garlic flakes, cloves, cinnamon stick, cardamom, mint leaves, green chili, and onion into a smooth paste.
- Heat oil+ghee in a vessel, add bay leaf, clove, cardamom, star anise and cinnamon and saute for few secs.
- Add sliced onions and saute for 4-5 min and add chopped tomatoes and saute for 4 min.
- Add the ground paste and fry for 8-10 min on a low flame.
- Add salt and mix it well and add rice and mix it well and saute for a min
- Add 2 3/4 cups of water and bring to a boil and reduce flame, place lid and cook till rice is done.
- Garnish with coriander leaves.
- Serve hot with pickle and yogurt.
