Vegan Fried Rice With Scrambled Tofu Recipe
Try this amazing Vegan Fried Rice Recipe. It is fresh, easy to make, and so tasty. This recipe is light and you can make it more healthy and tasty by using scrambled tofu.
Ingredients
Rice
- 1½ cupsuncooked rice (you can use any type of rice)
Scrambled Tofu
- ½ blockextra firm tofu, pressed for at least 20 minutes
- ½ tspturmeric
- ½ tbspnutritional yeast
- ¼ tspsalt
- ¼ tsponion powder
- ¼ tspfreshly ground black pepper
- ½ tbspolive oil
- 1small garlic clove, minced
Vegetables
- 2 tspolive oil
- 1medium carrot, diced (very small!)
- 1 cupfrozen peas
- Green onionsfor garnish (optional)
Sauce
- 2 tbsptamari(soya sauce)
- ¼ tspsalt
- ½ tspfreshly ground black pepper
- ¼ tspliquid smoke
- 1 tspsesame oil
- 1medium garlic clove, minced or grated
- ½ tsponion powder
- 1½ tbsprice wine vinegar
- 1 tbspbrown sugar
- 2 tspsriracha sauce (or to the heat of your liking!)
Directions
For Cooking the Rice
- Cook rice and keep it aside.
For the Scrambled Tofu
- Crumble the pressed tofu in a small bowl.
- Add turmeric, nutritional yeast, salt, onion powder, and pepper and mix it well and put it aside.
- Heat the oil in a medium pan over medium heat.
- Add the minced garlic and cook for a minute or so, or until the garlic has browned lightly.
- Add in the tofu mixture and cook for 5-7 minutes, stir often.
- Remove from pan and keep it aside.
For the Vegetables
- In the pan heat 2 tsp olive oil over medium heat, then add in the carrots and peas.
- Cook for about 5 minutes, or until the carrots can easily be pierced with a sharp knife and put it aside.
For the Sauce
- Whisk together all of the sauce ingredients and keep it aside.
- How to Proceed
- In a large pan or wok over medium heat, add sauce, then the rice, then the vegetables, then the scrambled tofu.
- Mix everything together very well, and cook for 5 minutes.
- Topped with chopped green onions, if desired.
- Serve it.
