Sabudana Vada Recipe
Sabudana Vada is a popular Maharashtrian snack made using sago or tapioca pearls also known as Sabudana. This Sabudana Vada turns out a delicious, crunchy on the outside and is soft inside. This Vada is usually served during festivals. Let’s follow this recipe.
Ingredients
- 1/2 cupsago (sabudana)
- 1 cupboiled, peeled and mashed potatoes
- 1/3 cuproasted peanuts, coarsely crushed
- 1/2 tspcumin seeds (jeera)
- 1 tspgrated ginger (adrak)
- 1 1/2 tspfinely chopped green chilies
- 2 tbspfinely chopped coriander (dhania)
- 1/2 tsplemon juice, optional
- sugaroptional
- saltto taste
- oilfor deep-frying
For Serving
- greenchutney
- 1 cupfresh curd (dahi) , mixed with 3 tbsp powdered sugar
Directions
- Clean, wash and soak the sago in approx. 1/3 cup of water for 4 to 5 hours or till all the water is absorbed and the sago is in double in size.
- In bowl add sago, mashed potatoes, roasted peanuts, cumin seeds, chopped green chilies, lemon juice, sugar( if your using), salt, and grated ginger and mix it well.
- Divide the mixture into 8 equal portions and shape each portion into a 75 mm. (3”) diameter flat round. Keep aside.
- Heat the oil in a kadhai and deep-fry the Vada on a medium flame till they turn light brown in color from both the sides.
- Drain on absorbent paper.
- Serve hot with green chutney and sweet curd.
